I have noticed the NMX changes in price during different market hours, can someone explain this?

The "stock market" is generally something else, like the New York Stock Exchange. NYMex trades futures contracts for things like oil and gas and precious metals like gold, silver, and platinum, although not limited to strictly these.

Unless you are a member of the exchanges, you buy or sell through brokers who are members. They sometimes have their own pool of trades and can get you traffic out of hours, but there are distinct limits that you will need to discuss with your broker.
