Once the claim is settled, you can cancel the insurance. Most insurance policies provide for 30 days to revover the vehicle and repair it, if necessary. After that, you're free to cancel.
I should think once it is stolen your insurance would take care of it. Call your agent

Right away the sooner the better. If the cops and your insurance know already just do it.
If there are more vehicles on the policy then remove it. If it is the only one I would wait out the thirty days to see if it is found and possibly still in driveable condition. It is one that is kinda a toss up. If it is the only one and you remove the vehicle the policy is canceled unless you have another vehicle to replace it with. Then if it cancels your back to square one again and possibly loose out on loyalty discounts and possible cancellations fees and start up fees of a new policy.
Coverage on a vehicle is good until the day it is stolen. Just to keep down paperwork (in case it is FOUND) keep the policy in force until settlement is complete.
