There are "libraries" written about this. You may consider a book google and a scholar google search on this. My suggestion is that you do a pre and post ICT discussion. And finish with a discussion of the impact of Mobile ICT on these three areas of the hospitality industry.

Call a local hotel that has a catering office. This would be where weddings and conventions are held. Ask if there is a good time for you to interview someone regarding what they do.
Take very specific questions that are related to what you are writing about. Try to keep the interview under 20 minutes, these folks are very busy.
