As many others have said, check out www.shrm.org and look into getting your PHR - there are certificate classes you can take before you take the exam.
(This might do more for you than an AA from an online school ... and it lots cheaper.)
I would also really suggest finding out if your local community college has a business program. They are more widely accepted than almost ALL strictly online programs. And you can transfer the credits to State College later. (I don't care what the online schools say - if you are serious about going that way, GO TALK TO YOUR STATE COLLEGE FIRST. They are the final authority if they will accept the units or not. I used to work at a University counseling center - and they DON'T accept everything. It was really frustrating for people who had spent $10-$20K to get a degree from an online program - only to find they couldn't get a job or transfer the units. PLEASE PLEASE PLEASE - talk to your local university! Community Colleges are much cheaper and will tell you what units will transfer!)

Business is a good focus if you can't find HR courses - but don't expect to walk in to a management role w/o experience. I have my Bachelors in Business with a focus in HR and I'm still not an HRM. Most places want someone who has done HR Generalist work for at least 3-5 years before promoting to HRM.

Definately check into getting your PHR Certification, and degrees, I believe to be hired directly into a Manager position you need your masters. I recommend getting a lower level job at a company that offers tuition reimbursement and work towards becoming a HR Manager and then try for your SPHR or GPHR certification.
For an associates, try an administration or business degree from a community college (I'm not sure of any online schools for your Associates), but you can try Strayer University. I now some traditional schools have online programs as well.
