Easy. Which are the easiest ones for you to take. Remember when you get your MBA electives help in that they can raise your GPA. A lot of times companies look at your GPA not at what courses you took. They know you had to take the necessary courses to get your MBA and of course they look at the school too.
Task of something easy I would try Project Appraisal and Asset and Liability Management...

Both Strategic type of Risk as he makes money in good and bad market. I love his show and he just wants you to get up off your A and get out there and bring back his investment with extra slices..No extra slices You got to go.
What area of work do you want to be in when you get through with your MBA? Think in terms of the area you want to focus your future career growth and see if that helps you to determine the classes.
But as an HR Major, I'd recommend looking at these four classes ( just my .02 though)
