There is the so called PC based, popular application used is MS Project, I will assume that you have tried your hand on this already.
There is also a collaboration type like MS Sharpepoints.
Then there is the network based, like Agile, corporate user can define what are needs, requirements and task management in this system, its a customize application.
As for techniques, there are those who follows the MS Project schedule, there are those who refer to Gantt chart, then there are experience folks [including me] who rely on the ability to visualize the whole project, delegates and identify bottleneck, without using paper or notes.
