Is my Brisket ruined? Health concerns!?


Question:
I had my brisket in the oven for 3 hours at warm. I had planned for it to be at 325 while I cooked it, some how it got changed. My question is, will the brisket still be good if I cook it at 325 for another 3 hours? Isn't there some health concerns with it being at such a low temp for so long?

Answer:
On my oven, warm is about 200 degrees, if yours is that or higher, you should be ok. If it is under that 175 or lower, then you might want to be concerned, but I dont think too many ovens, if any go that low on a setting. Just let it go, as previously mentioned it will probably just fall apart. If it looks a bit dry, just give it a little moisture and keep going. It should be fine.

It should be just fine. Think of it as having tenderized at low heat in a crock pot for three hours -- it's the same principle.

Just make sure that it's cooked all the way through and hot when you take it out of the oven.
actually, it probably will be better than any other time you cooked a brisket. It will just fall apart when sliced and be very tender.
