I dont know of any courses, however, I do know a few other good resources. Good Tutorials (http://www.good-tutorials.com) is an excellent website for Photoshop tutorials.

As for books, you should go for the official Adobe Book (Classroom in a Book). Photoshop Down & Dirty Tricks by Scott Kelby is also a very good book.
