How about becoming a legally ordained minister... easiest course in the world. You just give them your name.
Then you can go around absolving people, marrying people and baptizing babies. Its fun!
For me, business.
I have taken a few online courses for business and I got A's on all of them.
courses that do not require professors/teachers to be crucial in your learning process
courses that are self-explanatory and easily understood when first learned.
recommended:
world religions, art appreciation, music appreciation, sociology, psychology
PS i don't recommend taking economics online, it will make you insane!

Depends on your major and what you like, I suppose. I am taking interpersonal communications which is easy for me but my husband hated taking it. He took database maintenance and design. I like Access...but I don't like databse design enough to devote a semester to it.
What is something you like that you want to learn about?
I think that if an online degree is "easy" then it is crap
