I'm 1 class away from completing my degree. Are there any online schools that would let me take just 1 class?

Question: I Need a Spanish class. I'm no longer in the same city as my original University and I work full time. The class must be an advance course. Most online schools (AIU online, University of Phoenix Online)do not offer single courses. Any suggestions?
