5.1 Dolby from Over-the-air Broadcasts?

I'm about to buy a new HDTV, and we're planning on switching from cable (Charter) to satellite (DirecTV); but we're gonna start off w/ all SD set-top-boxes, and a DVR or two(also SD). I'm the only one in the house planning on upgrading to HD right now, so we won't order HD programming yet; also because there isn't too much available, though DirecTV does say about a dozen or so more HD channels are coming by year's end.
My question is, i know not all HD programming probably is in 5.1 Dolby surround. And i know that they say some HD programming fom Cable/Satellite providers is in surround sound(w/ and STB). I'm wondering, are some Over-the-air broadcasts also in 5.1 Dolby as well... even though it's terrestrial(O.V.A.)? Like the Primetime shows on NBC or CBS that are in HD... I've seen them say at the beginning "Availible in HD/5.1".
The other thing that makes me ask this, is because HDTVs with digital tuners in them(ATSC) most likely have digital audio out; optical or coaxial...

Answer:
The outputs will vary between different sets. 5.1 is the standard audio signal for HD on both satellite and terrestrial signals. If for some reason it is different, your audio system should automatically make the appropriate adjustments.
You ask many different questions

First lets start with HD TV's without ATSC tuners in them

If you tune to station with Dolby broadcast and connect your
monitor audio (red and white RCA's) to a surround sound
better TV's like a Hitachi will have Dolby present

Now for HDTV's with ATSC built in
the DOLBY is ONLY found on the ATSC audio output
meaning if it isnt digital TV its in stereo

the Dolby surround is not reproduced by the TV
that requires a minimum of 5 speakers
but is available

Almost all Terrestial HDTV programming is in surround mode
however not all programming on HDTV channels is in HD

Also in regards to your change to Satellite TV
Many installers like to "USE" the existing coax
lines from the cable install to speed things up

INSIST on new lines from the dish to each reciever
this will provide the best possible picture quality
guarenteeing no splices or barrel slices

and with the leftover RF coax already inplace
you can set one SD reciever to RF 3 and one to RF 4
and feed them into the coax for your present cable

and aquire PIP from satelite service in other rooms
