Non-HD TV signals won't look great on a big screen HDTV. Two potential suggestion to improve picture:
1) Callibrate your TV. You can hire someone to do it professionally, although it might not be worth it money wise for your uses. There are a few DVDs out there (i.e. Avia or Digital Video Essentials) that help the user set correct levels of contrast, brightness, and so forth on TVs. It will improve the picture. Many TVs come set in "torch" mode, being set way too bright This can led to burn in, particularly with plasma TVs.
2) Get an upscaling DVD player. You can get a simple upscaling DVD player, but most HD-DVD and Blu Ray players also upscale DVDs and you get a next generation format player as well. These upscalers take normal DVDs (which come with 480 lines of resolution) and improves the picture quality (up to 1080 lines). They are nice machines.
That should help somewhat. Also, make sure you use the best possible connections to maximize quality of video. HDMI is the best, but component will work almost as well (the red, blue, and green cables). And make sure the settings on everything you use is set-up to output the highest resolutions you can get (1080). DVD players need to be set-up to accomodate the screen size of the TV and possibly resolution outputs.
