Make a long run of metal pipe where the sun will hit it. Have a bunch of switchbacks and put a metal plate behind it to reflect more heat back to the pipes.
just adding to the last answer, at our cottage in FLA they used black piping, and snaked it back and fourth on a fence, ddint take up any room and worked well.
Do not use copper as it will corode inside due to the chemicals use in the pool water. use pvc and paint it black in a seropinteen configurations with the water going in one side and retuning to the pool heated out the other end
