What type of roof works better for a passive solar house: peaked or flat and sloping and why?

Depends on where you live. You would want something to be as flat as possible. The sun's intensity is the greatest during noon (hottest time of the day), when it is overhead and there is only a thin layer of atmosphere absorbing its energy, which means more energy is absorbed by the solar house. You would want your solar panels to be pointing towards the sun at this time of the day. During dawn, the sun's rays has to pass through a very thick atmosphere due to its angle, and so it would be weak.
