Actually, there aren't as many solar systems as there are stars. Unlike our star, most stars are gravitationally bound to other stars, forming binary stars. So, most solar systems have multiple stars.

Of course in the most technical sense, all stars are solar systems, but usually what is meant by a solar system is a star with planets around it. Up until a few years ago, the only known solar system was the one in which you are currently sitting. It has long been assumed that at least some of the stars in the sky have planets around them, thus making them solar systems in the usual meaning, but no one could be sure. Then, astronomers began to notice that certain stars wobbled from side to side ever so slightly. They did the math and realized that these stars were being pulled around by the gravity of planets. Since then technology has improved and many, many new solar systems have been discovered.
Interestingly, the universe may be infinite, meaning that it goes on forever with no end to the number of stars in it. If this is true, then even if only one star in a hundred has a planet, and even if only one planet in a hundred million has life, then the universe should be teeming with life on an infinite number of planets.
