When setting up a basic culinary training... Personal I would start with 1)knives, 2)vegies, 3)breakfast cookery( if you have it), 4)soups and stocks, 5)meats and seafoods, 6) desserts and pastries.
visit such restaurants where such training is actually give.meet there restaurant owner and trainer who is imparting it. try to get from him references and search them in the liberary.copy notes,take down xerox of important para, of all the relevent references.try to get atleast two references for each item in the setup,donot get more than three references.read all references.make out line of the thesis such as introduction,history,parts of the training procedure,eligibilty criteria, actual course ,who is going to impart it ,how to impart it,theory and practicals, evalluation procedure,awards and new developments lastly. show it to your guide accept changes he may suggest and then take out final version of the thesis,and get prints and nicecover and fitting.
