hi in my days you had to have city and guilds 706/1 and 706/2 certificate before i could even specialize in which category i wanted. not sure for now, but do check out all colleges that teach catering only when you have some form of qualifications then you can specialize into the pastry chef de partie that you want. personally i think the quickest way for you to get into this field is to be an apprentice although i am not sure the age for that is as you are 28yrs start looking up or going to restaurants of your choice and try and link up with staff needed/or ask people that you know who are in this field, BUT certificates behind you will go a long way.
good luck.
The best would be to dedicate yourself full time to a culinary school with a baking & pastry program.
