Is it possible for a person to become a pastry chef even if he didn't had formal lessons in pastry? I hate being rushed, is pastry chefs' job all about speedy production of pastry? thanks

Try to find a job as an "apprentice". You might be able to learn the ropes while you're getting paid a small salary. As far as the speedy production, it depends on who you work for and the work environment.
yes it s possibe but my advice for you is to go to a culinary school.It may take you 2 years or even 9 months depending on the program that you choose and the degree that you want.You will learn so much and that also increase your chance of getting a job in the culinary operations.It is one of the largest job industry in the U.S. and it is really competitive.
