I think you get more appreciation as a pastry chef. Visually what you make is much more appealing.
Some of the things that I like about being a pastry chef are:
1. everyone wants to be your friend
2. you are invited to all the cool parties (you must bring dessert)
3. you are the very last one to leave a final impression w/the guests (no pressure)
4. Pastries allow you the freedom to use all of your creativity, passion, and training from both sides of the kitchen
5. you get to work with incredible ingredients
6. It allows you to learn more about yourself every day
7. Meeting new people and learning new techniques from them to broaden and hone my skills
and the best one of all
I can make people of all ages instantly turn into kids again. They start smiling and laughing at the sight of some of their favorite desserts. That for me makes an evening of work all worth while.
